By the mid-1880s, brewers across Europe faced a shared problem: beer could suddenly spoil without warning. Entire batches might develop sourness, bitterness, or instability, causing major financial losses. Even the most advanced breweries struggled to identify the exact cause.

Following Pasteur’s discoveries, Danish brewing pioneer Jacob Christian Jacobsen founded one of the world’s first dedicated brewing research laboratories at Carlsberg. There, scientist Dr. Emil Christian Hansen successfully developed techniques for cultivating pure yeast strains from a single cell, offering brewers unprecedented control over fermentation.

The breakthrough suggested that beer quality could be stabilized through scientific yeast selection — a concept that would soon transform global brewing.


Heineken Joins the Scientific Movement

Meanwhile in Amsterdam, Heineken brewmaster Feltmann experienced similar production challenges. Determined to understand the issue, he began discussing the problem with fellow European brewers, including colleagues in Alsace.

In 1885, Feltmann travelled to Munich, one of Europe’s most advanced brewing centres, to participate in international meetings focused on fermentation science. Remarkably, he was the only Dutch brewer involved in these discussions, demonstrating Heineken’s early commitment to technological and scientific leadership.

These collaborations marked a turning point. Heineken was no longer simply adopting new brewing methods — it was actively participating in the scientific revolution that would redefine the beer industry.
